Bacon and Banana Fritters

An interesting variation on banana fritters! Serve with eggs for breakfast, or with a salad for lunch. These fritters are lovely hot or cold.

  1. Combine the bacon with eggs and sift in flour, baking powder and salt. Blend well.
  2. Fold in sliced banana.
  3. Heat butter in fry pan and drop in a tablespoon of batter at a time. 
  4. Fry on both sides until puffy and golden.

3 rashes bacon - cooked and chopped

2 eggs - well beaten

2 tbsp flour

1/2 tsp salt

1/2 tsp baking powder

1 large banana - sliced

4 tbsp butter
