Hasselback Kūmara

- 4 kūmara
- 2 tablespoons olive oil
- ¼ cup Greek yoghurt
- Handful fresh coriander, finely chopped
- Handful dill, finely chopped
- 1 clove garlic, minced
- Preheat oven to 200°C
- Thinly slice the kūmara leaving the bottoms intact. Place onto an oven tray and drizzle with olive oil
- Roast in the oven for 35-40 minutes or until golden and crisp
- In a small bowl combine the dressing ingredients and mix well
- Top kūmara with a small amount of sauce and sprinkle over extra coriander before serving
