Roasted Sweetcorn with Garlic Butter

- 5 ears sweetcorn, husked
- 2 tablespoons chopped parsley
- ½ teaspoon smoked paprika
Garlic butter
- 2 cloves garlic, minced
- 25g butter
- Zest of 1 lemon
- Juice of 1 lemon
- Pinch black pepper
- ¼ cup chopped parsley
- Pinch cayenne pepper
- Preheat the oven to 180°C
- In a small bowl, combine garlic butter ingredients and set aside
- Place sweetcorn onto an oven tray or directly on the oven rack and roast for 30 minutes, turning every 10 minutes
- Spread butter over sweetcorn and garnish with parsley and paprika
