Roasted Sweetcorn with Garlic Butter

  • 5 ears sweetcorn, husked
  • 2 tablespoons chopped parsley
  • ½ teaspoon smoked paprika

 

Garlic butter

  • 2 cloves garlic, minced
  • 25g butter
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Pinch black pepper
  • ¼ cup chopped parsley
  • Pinch cayenne pepper

  1. Preheat the oven to 180°C
  2. In a small bowl, combine garlic butter ingredients and set aside
  3. Place sweetcorn onto an oven tray or directly on the oven rack and roast for 30 minutes, turning every 10 minutes
  4. Spread butter over sweetcorn and garnish with parsley and paprika
