Italiano Pizza

  • 435g Annabel's Pizza Base Mix
  • 2 tbsp oil
  • 1 cup (250ml) hot water (tap hot, not boiling hot)
  • 130g Annabel's Pizza Sauce
  • 100g salami, slices cut in quarters
  • 100g mushrooms wiped clean and sliced
  • 1 small red onion, halved and finely sliced
  • 240g grated cheese
  • Salt and Pepper

1. Place Annabel’s Pizza Base Mix in a bowl. Make a well in the centre and add 2 tbsp of oil and 1 cup (250ml) of hot water. Mix the dough until it comes together, turn out on a work surface, and using lightly oiled hands, knead for 2 minutes until the dough is smooth and elastic. If dough is too sticky to handle, sprinkle with a little flour. 

2. Cut dough in half. Form into 2 balls and place each in an oiled large bowl and cover with clingfilm or a tea towel. Place the dough in a warm place to rise for 15 minutes. 
3. While the dough is rising, preheat oven to 250°C conventional or 230°C fan bake. 
4. Line 2 oven trays with baking paper. Turn out the pizza dough onto the prepared trays. Using an oiled rolling pin or lightly oiled hands, roll or press each piece of dough out into a 35-40cm diameter circle depending on how thick you like your base. 
5. Divide Annabel’s Pizza Sauce over the two bases and spread out evenly, leaving a 1-2 cm clean rim around the edge of the dough. 
6. Cut salami slices in halves or quarters, thinly slice the mushrooms and the red onion. Sprinkle both bases with a little of the grated cheese (about a quarter), divide salami, mushrooms and red onion evenly over both pizzas and sprinkle over the rest of the grated cheese. Season lightly with salt and pepper. 
7. Place pizza trays in the oven and cook for 8-10 minutes depending on how crispy you like your base.
