Banana bread
One of the easiest things to bake, and the best way to use up old bananas! Our banana bread is perfect served fresh from the oven with a bit of butter and a cuppa.

- 3 ripe bananas, mashed
- 1/3 cup melted butter or vegetable oil
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- Optional: 1/2 cup chopped walnuts or chocolate chips.
- Preheat your oven to 175°C. Grease a loaf pan or line it with baking paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter, sugar, beaten egg and vanilla extract. Mix well until all the ingredients are thoroughly combined.
- Sprinkle in the baking soda and salt and stir to incorporate. Gradually add the flour to the wet ingredients, stirring until just combined. Be careful not to overmix.
- If using, fold in the chopped nuts or chocolate chips until evenly distributed throughout the batter.
- Pour the batter into the loaf pan, spreading it out evenly with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.

Store your banana bread leftovers in an airtight container at room temperature for a few days or in the refrigerator for longer freshness.
