Banana bread

One of the easiest things to bake, and the best way to use up old bananas! Our banana bread is perfect served fresh from the oven with a bit of butter and a cuppa.

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter or vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped walnuts or chocolate chips.

  1. Preheat your oven to 175°C. Grease a loaf pan or line it with baking paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter, sugar, beaten egg and vanilla extract. Mix well until all the ingredients are thoroughly combined.
  4. Sprinkle in the baking soda and salt and stir to incorporate. Gradually add the flour to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. If using, fold in the chopped nuts or chocolate chips until evenly distributed throughout the batter.
  6. Pour the batter into the loaf pan, spreading it out evenly with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.

Tip

Store your banana bread leftovers in an airtight container at room temperature for a few days or in the refrigerator for longer freshness.
