Bacon and egg burger with Sriracha mayonnaise
These bacon and egg burgers are easy to make from ingredients from your fridge, and are packed with flavour. Use a sriracha mayonnaise, or make your own by combining sriracha and mayonnaise in any proportions until you reach your desired flavour.

- 1 burger bun
- Handful baby spinach leaves
- 3 slices Pams finest dry cured streaky bacon, fried or grilled
- 1 egg, fried
- ½ spring onion, finely sliced
- Sriracha Mayonnaise
- Beef mince patty or thin slice of chicken breast
- Cook the chicken or meat patty.
- Halve the burger buns and lightly toast on both sides.
- Cover the base of the bun with spinach leaves, bacon, then patty.
- Carefully place the egg on top and sprinkle with spring onion. Drizzle with sriracha mayonnaise and cover with the bun lid.

Tomato tastes great with bacon, so add a thick slice of tomato on top of the bacon.
