Chicken and Corn Soup
All the comfort and deliciousness of chicken and corn soup without the hours of making your own broth! Throw this together on a weeknight or to round out a hard week.

- 1 litre of chicken stock
- 2 x 410g can creamed corn
- 1 tbsp soy sauce
- 2 tsp rice vinegar
- 1 tsp grated fresh ginger
- 1 tsp crushed garlic
- 1 tbsp cornflour mixed with 2 tbsp water
- 400g shredded chicken
- Salt and pepper
- A handful of coriander leaves
- Add chicken stock, creamed corn, soy sauce, vinegar, ginger, garlic and cornflour to a large saucepan and bring to a boil over a medium heat.
- Reduce the heat to low and simmer for 5 minutes until combined and slightly thickened.
- Add shredded chicken and season with salt and pepper to taste.
- Serve with chopped coriander leaves as garnish.
