
Garlic, butter and rosemary potato skewers

For a twist on roast potatoes, go for these garlic and rosemary potato skewers. Easy to make on the BBQ or roast in the oven, these crispy spuds go with almost any meal. This dish is part of the Eat Well This Christmas for Less menu.

Ingredients
1.5kg Pam's Gourmet Potatoes
Salt & Pepper
2tbsp Butter
2 Garlic Cloves
1tsp Dried or Fresh Rosemary
Method
Dice the gourmet potatoes into halves and add to a large saucepan of water with a pinch of salt. Cover and bring the water to the boil, turn the heat down to a gently simmer and continue to cook until the potatoes are soft. Drain the water and add the potatoes back to the saucepan.
Add the butter, crushed garlic cloves and rosemary to the potatoes. Toss to coat until the butter has melted and the potatoes are evenly coated. Season with salt and pepper.
Add the potatoes to the skewers once they are cool enough to touch. Place skewers on a large non-stick oven tray, or line a tray with non-stick baking paper. Roast in the oven for 25-30 minutes, until golden brown (alternatively, brown on the BBQ). Serve.
