
Grilled vegetable skewers

Ingredients
1 Capsicum
2 Courgettes
1 Red Onion
1 Punnet of Cherry Tomatoes
1 tbsp Oil
Salt/Pepper
Method
Dice the capsicum, courgettes, and red onion into even sized pieces.
Add the capsicum, courgettes, red onion, and cherry tomatoes to wooden skewers.
Drizzle the vegetables with oil and season with salt and pepper.
Cook on the BBQ for 8-10 minutes and serve hot.
