Mexican Fiesta Bowl
Love Mexican? You will love this! A quick, easy, and healthy meal ready in less than 10 minutes and is less than 2 dollars a serve. All you need is 3 cans!

Method
- 1 can chopped tomatoes
- 1 can black beans or kidney beans, drained and rinsed
- 1 can corn, drained and rinsed (frozen corn is fine too)
- 1 red onion, finely sliced
- 1 tbsp olive oil
- Optional: chili flakes, Mexican spice mix
- Heat the oil in a non-stick pan, fry the onion gently along with the chili flakes or Mexican spice mix until the onions are soft
- Add the tomatoes, beans and corn, heat through
- Serve with rice
Optional extras to serve: Shredded lettuce, grated cheese, sour cream, avocado
