
Mexican Fiesta Bowl

Ingredients
1 can chopped tomatoes
1 can black beans or kidney beans, drained and rinsed
1 can corn, drained and rinsed (frozen corn is fine too)
1 red onion, finely sliced
1 tbsp olive oil
Optional: chili flakes, Mexican spice mix

Method
Heat the oil in a non-stick pan, fry the onion gently along with the chili flakes or Mexican spice mix until the onions are soft
Add the tomatoes, beans and corn, heat through
Serve with rice
Optional extras to serve: Shredded lettuce, grated cheese, sour cream, avocado
