Pan fried Orange Roughy
Here's one that shows the true beauty of New Zealand seafood - With just a few ingredients, and a few minutes in the kitchen you'll get a result that will see plates scraped clean every time.

- 4 fillets of orange roughy
- Seasoned flour to dust
- 100g butter
- 100g capers
- Juice and zest of 2 lemons
- Fresh parsley and coriander, chopped
- Salt and pepper
- Gourmet potatoes
- 4 rashers streaky bacon
- 500g green beans
- Dust the fish fillets with the seasoned flour. Heat a pan with a splash of oil. Place fillets into pan with a knob of butter and brown on each side (3-4 minutes).
- In a separate pan melt the remaining butter, capers, lemon juice and zest. To serve, lay fillets on a large plate. Spoon over lemon caper butter and finish with chopped parsley and coriander.
- Serve with gourmet potatoes, and steamed green beans wrapped in streaky bacon.
