Smoked chicken and brie pizza

With a super simple pizza base recipe, this is a great way to impress a crowd. Making your own bases is cheap and easy, and the finished product has a delicious, yeasted flavour — definitely a talking point when you bring your pizza to the table.

Method

Pizza dough:

  • 3/4 cup lukewarm water
  • 2 tsp dried yeast
  • Pinch salt
  • Pinch sugar
  • 2 cups Pams plain flour
  • 2 Tbsp Pams Pure olive oil

Topping:

  • 1/2 cup cranberry sauce
  • 1 cup Pams smoked chicken breast, shredded
  • 1 small red onion, thinly sliced
  • 1/2 wheel brie, cut into chunks

  1. Gently mix together the water, yeast, salt and sugar. Stand for 5 minutes, or until bubbles appear on the surface. Sift the flour into a large bowl. Add the yeast mixture and oil. Mix to form a soft dough.
  2. Turn out on to a lightly floured surface. Knead for 8 minutes. Shape dough into a ball and place in a lightly oiled bowl. Cover loosely with cling wrap and place in a warm, draught-free area for 40 minutes, or until dough has doubled in size.
  3. Punch dough down and roll into desired shape and place onto a floured pizza stone or oven tray. Spread the cranberry sauce thinly over the pizza base. Arrange the smoked chicken, red onion and brie on top of the cranberry sauce and sprinkle the pizza with the mozzarella cheese.
  4. Bake in a preheated 200°C oven for 15 - 20 minutes, until crisp and golden.

Tips and FAQs

Pizza dough is really easy to make, but if you're short on time use premade pizza bases.

We love the combination of savoury chicken and onion complemented by sweet, tart cranberry sauce. Try mixing it up by using apricot sauce, spring onions or turkey!

If you have leftover cooked chicken to use up, you can use this instead of smoked chicken.

Do you need to cook chicken before putting it on pizza?  
This recipe calls for pre-cooked smoked chicken, however we do recommend always using cooked chicken when topping pizza. 

What goes first meat or cheese on homemade pizza?   
Often the cheese goes before the toppings, but for this recipe you are in charge! Place the ingredients in whatever order you wish, and the taste will still be the same!
