Winter Brocco Slaw
Choc full of nutrients, you’ll love this fresh and tasty slaw with a sweet twist! Eat on it's own or serve as a side with your main course.

Ingredients
Method
- ½ green cabbage, shredded
- ½ red cabbage, shredded
- 1 large red onion, thinly sliced
- 4 carrots, grated
- 1 broccoli – florets finely chopped, woody outside of the stalk removed then the inside flesh grated
- ¾ cup sultanas or dried cranberries (or a mixture)
Optional extras:
- 1 small handful of fresh mint leaves or parsley, thinly sliced
- ¾ cup seeds eg pumpkin seeds, sunflower seeds
- Mix together the ingredients in a large mixing bowl, add a dressing of your choice and stir through.
Serving suggestions
Serve as a side for chicken drumsticks or steak, or eat on it's own.
Tips
To prep the salad the night before for lunch, chop up the veges and refrigerate in a sealed container. Leave off the dressing until your ready to eat.
For added protein, add some shredded chicken or beef.
