Winter Salad with Beef

This is an absolutely delicious salad with fresh, spicy Thai inspired flavours. Reduce spices and add carrot, cucumber and croutons if introducing this dish to the kids!

Method

Beef mixture

  • 250 g Prime Beef Mince
  • 1 Tbsp olive oil
  • 1 red onion, finely chopped
  • 1 clove garlic, crushed
  • 1 Tbsp sweet chilli sauce

 

For dressing

  • 3 Tbsp fresh lime juice
  • 1 Tbsp fish sauce
  • 1 Tbsp sugar
  • 3 Tbsp water
  • 1 tsp ginger, finely chopped
  • 2 Tbsp fresh coriander leaves

 

For salad

  • 1 to 2 cos lettuces washed and drained
  • 2 medium carrots, peeled and cut into ribbons with a potato peeler
  • handful each of fresh mint and coriander leaves
  • baby beetroot (for colour)

1. Heat the oil in a non-stick frying pan and stir onion and garlic over a moderate heat until browned. Add minced beef and cook for a further 10 to 15 minutes until beef is crispy. Place the meat mixture onto a paper towel to absorb any excess fat while you prepare salad greens and dressing.

2. For dressing, mix all the ingredients together in a sealed glass jar and shake well.

3. Arrange the salad mixture on a serving platter using the minced beef for the topping. Pour over the dressing and garnish with fresh coriander and mint leaves.

Tips:

  • Wait for the beef to cool before adding it to the salad leave to avoid a soggy salad!

FAQs:

  • Do you need to season salad?
    Salads need seasoning just like any other dish! However, if you prefer to enjoy the dish for its natural flavours just add 1 tablespoon of olive oil to allow everything to mix together nicely.
  • Can I substitute any ingredients?
    Yes! Our recipes can be adjusted to your liking, just omit or add any ingredients you wish.
