
Asparagus quiche

Asparagus is an abundant spring vegetable, available in New Zealand from around September through to Christmas time. You can simply sauté asparagus to serve with your meals, or bake it into this deliciously simple quiche.
Ingredients
1 pre-made pie crust
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 small onion, finely chopped
1 cup shredded cheese (Gruyère, cheddar, or your favourite)
5 large eggs
1 cup milk (use whole for better texture)
Salt and pepper, to taste
1 tbsp olive oil or butter (for sautéing)
Optional: a pinch of nutmeg or dried herbs (like thyme) for extra flavor
Method
Preheat the oven to 190°C.
Place the pie crust in a 22cm (medium size) pie dish, pressing it into the bottom and sides. Trim any excess dough. Prick the bottom with a fork and prebake the crust for about 10 minutes until lightly golden. Set aside.
Heat olive oil or butter in a pan over medium heat. Sauté the chopped onion for about 3-4 minutes until softened. Add the asparagus pieces and cook for another 2-3 minutes until tender. Remove from heat.
In a medium bowl, whisk together the eggs, milk, salt, pepper, and optional nutmeg or herbs.
Spread the sautéed asparagus and onions evenly over the pre-baked pie crust. Sprinkle the shredded cheese on top. Pour the egg mixture over the filling.
Place the quiche in the oven and bake for 35-40 minutes, or until the center is set and the top is lightly golden.
Tips
Let the quiche cool for about 10 minutes before slicing.
This quiche can be served warm or at room temperature. To serve, add a side salad and your favourite relish or chutney.
To trim asparagus, simply snap the stalk where the harder, woody part ends. Hold the stalk and bend it, it will naturally snap where the stalk starts to bend.
