Vanilla cupcakes
Cupcakes are a perfect treat for birthdays, a morning tea or celebration. Add your favourite icing and top with colourful sprinkles for a deliciously light and fluffy sweet treat!

- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ½ cup milk
- Preheat your oven to 175°C and line a 12-cup muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder and salt.
- In a large bowl, beat the softened butter and sugar together with a hand mixer (or stand mixer) on medium speed until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start with the dry ingredients and mix just until combined, being careful not to overmix.
- Divide the batter evenly between the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
You can top the cupcakes with your favorite frosting, like vanilla buttercream and a sprinkle of hundreds and thousands.
