Vanilla cupcakes

Cupcakes are a perfect treat for birthdays, a morning tea or celebration. Add your favourite icing and top with colourful sprinkles for a deliciously light and fluffy sweet treat!

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup milk

  1. Preheat your oven to 175°C and line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder and salt.
  3. In a large bowl, beat the softened butter and sugar together with a hand mixer (or stand mixer) on medium speed until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start with the dry ingredients and mix just until combined, being careful not to overmix.
  6. Divide the batter evenly between the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

You can top the cupcakes with your favorite frosting, like vanilla buttercream and a sprinkle of hundreds and thousands.
