Pikelets
Fancy a sweet treat for breakfast (or any time of day!)? This easy recipe for pikelets will have you grinning - they're so easy, the kids will love to help you make them. Serve with cream and jam or any topping you want.

- 1 cup self-raising flour
- 1 tablespoon sugar
- 1 egg
- ¾ cup milk
- A pinch of salt
- Butter or oil (for cooking)
- In a bowl, sift the self-raising flour, sugar and salt together.
- In a separate bowl, whisk the egg and milk together.
- Gradually add the wet ingredients to the dry ingredients, stirring until you get a smooth batter. It should be thick but pourable.
- Heat a non-stick frying pan over medium heat. Lightly grease with butter or oil.
- Spoon about 2 tablespoons of batter for each pikelet into the pan. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Best served warm, with jam and a dollop of whipped cream.
Optional: top with fresh seasonal fruit like blueberries, sliced strawberries or peach slices.
What are pikelets?
Pikelets are basically mini-pancakes! They have a similar taste, but pancakes are normally much wider, thinner. Pikelets are slightly sweeter, denser and more fluffy.
