Chicken and broccoli bake
Nothing makes broccoli taste good quite like cheese! This chicken and broccoli pasta bake comes together easily and is sure to be a hit with the whole family.

- 2 tsp cooking oil
- 400 g chicken breast, cut into 2 cm slices
- 250 g uncooked spiral pasta
- 2 heads broccoli, broken down into bite-sized florets
- 1 tsp dried thyme
- 2 tsp crushed garlic
- 1 cup chicken stock
- 1 cup milk
- ½ cup sour cream
- Salt and pepper
- 1 cup Colby cheese, grated
- ½ cup panko bread crumbs
- 50g parmesan cheese, grated
- Preheat the oven to 180° C.
- Heat oil in a frying pan over a medium-high heat. Add chicken and cook for 3-4 minutes on each side until lightly golden brown all over. Remove from the heat.
- In an oven-safe dish, add the chicken, pasta, broccoli, thyme, garlic, stock, milk and sour cream. Season to taste. Using a wooden spoon, mix to combine. Cover with a lid or tin foil, then bake for 20 minutes.
- Remove from the oven and add Colby cheese. Stir to combine, then sprinkle panko and Parmesan cheese on top. Return to the oven, uncovered, for another 15 minutes or until the top is crispy and golden.
Serve hot. For added nutrition, serve with a side salad or vegetables.
