Dhal curry with cauliflower and spinach
Here's a great vegetarian curry recipe that everyone can enjoy. It's simple to make and healthy. Dhal is a curry made from dried split lentils. It’s a popular vegetarian dish, and the use of pulses makes it high in protein. This dhal gets lots of flavour from ginger, garlic and curry powder.

- 2 tbsp oil
- 1 onion, chopped
- pinch salt
- 3 cloves garlic, crushed
- 1 tbsp ginger, minced
- 2 tbsp curry powder
- 1 cup red lentils
- 6 cups water
- 2 tomatoes, diced
- 1/2 cauliflower, cut into florets
- 1/2 bag spinach, washed and roughly chopped
Method
- Heat oil in a large pot
- Gently cook onion with salt over low heat until soft
- Add garlic, ginger and curry powder. Cook for 1 minute
- Add red lentils, water and tomatoes. Cook for approximately 30 minutes or until the lentils are soft
- Add cauliflower and cook for 5 minutes
- Mix spinach through and cook for 1 minute
- Season with pepper
Tip
Cook double and freeze the rest to have on hand for an evening when the fridge is bare. Use frozen spinach and cauliflower when they’re not in season.
