Easy butter chicken

Butter chicken is a popular dish with Kiwis and you can still afford to enjoy this on a limited budget. We’ve got a simple quick recipe for midweek meals. It uses a wonderful ready-made sauce that comes complete with its own sachets of dried spices, adding tons of flavour to this dish. 

This recipe is part of our budget meal plan for two.

  • 1 Cup of long grain white rice
  • 1 Onion finely diced
  • Vegetable oil
  • 2 Chicken Breasts diced
  • Salt & black pepper
  • 1 Packet of Taste of India Butter Chicken Simmer Sauce

  1. Follow the instructions on the packaging to start cooking the rice
  2. Add 1/2 Tablespoon of vegetable oil to a large frying pan and add the onion. Cook on medium heat until translucent, remove and set aside
  3. Add 1 Tablespoon of vegetable oil to the pan and increase the temperature to high. Add the diced chicken and sear quickly on all sides. Season the chicken with salt and black pepper.
  4. Add the onions back into the pan. Cover the chicken with the sauce and stir.
  5. Take the spice pouch on the back of the sauce packaging and sprinkle the spices all over the sauce then stir in thoroughly.
  6. Place a lid on the pan and bring back to the boil. Then reduce the heat to a simmer for 15-20 minutes.
  7. Serve with a side of rice.

Suggestions:

You can add leftover vegetables to the curry at stage 5 – butternut squash, carrot and cauliflower are perfect additions.

You can substitute the chicken breast with cheaper cuts of boneless chicken.
