Easy Corn Fritters
Looking for a quick meal to feed the family? Try these great corn fritters that are super quick and easy to make, no milk or cream needed. Serve with a side salad or some bacon for a tasty brunch.

- 3 cups corn kernels
- 1 capsicum, diced
- 4 eggs
- 1/2 cup flour
- 1 tsp baking powder
- 3 tbsp oil
- Mix together the corn kernels, capsicum, eggs, flour and baking powder in a large bowl.
- Heat oil in a large frying pan, on medium heat.
- Cook in batches until browned on each side.
Eat while still hot, with a side of salad, sweet chilli sauce and some sliced avocado.
You can add any kinds of vegetables or additional herbs you like - grated carrot, onion, spring onion, mushrooms.
