Easy Feijoa Cake with Cream Cheese Icing

Here’s a super simple, no-fuss feijoa cake with a tangy cream cheese icing, perfect for using up all the autumn feijoas!

Ingredients

Cake:

  • 1 ½ cups peeled, roughly mashed feijoas
  • 1 cup sugar
  • 100g butter, melted
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ cup plain yoghurt or milk

Cream cheese icing:

  • 125g cream cheese, softened
  • 50g butter, softened
  • 1 ½ cups icing sugar
  • 1 tsp vanilla essence
  • A squeeze of lemon juice

Method

  1. Preheat oven to 180°C (160°C fan bake) and grease and line a medium cake tin.
  2. In a large bowl, combine mashed feijoas, sugar, melted butter, eggs and vanilla. Mix well.
  3. In another bowl, mix flour, baking powder, baking soda, and cinnamon.
  4. Add dry ingredients to wet ingredients.
  5. Stir in the yoghurt (or milk) until you get a smooth batter.
  6. Pour into the cake tin and bake for 40–45 mins, or until a skewer comes out clean.

To ice the cake

Cool completely before icing.

  1. Beat cream cheese and butter until smooth.
  2. Add icing sugar, vanilla and a squeeze of lemon juice. Beat again until fluffy.
  3. Use a knife to spread evenly on top of the cake.

Tip

Don't like icing? Simply dust with a mix of sugar and cinnamon.
