
Easy Feijoa Cake with Cream Cheese Icing

Here’s a super simple, no-fuss feijoa cake with a tangy cream cheese icing, perfect for using up all the autumn feijoas!
Ingredients
Cake:
- 1 ½ cups peeled, roughly mashed feijoas
- 1 cup sugar
- 100g butter, melted
- 2 eggs
- 1 tsp vanilla essence
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ cup plain yoghurt or milk
Cream cheese icing:
- 125g cream cheese, softened
- 50g butter, softened
- 1 ½ cups icing sugar
- 1 tsp vanilla essence
- A squeeze of lemon juice
Method
- Preheat oven to 180°C (160°C fan bake) and grease and line a medium cake tin.
- In a large bowl, combine mashed feijoas, sugar, melted butter, eggs and vanilla. Mix well.
- In another bowl, mix flour, baking powder, baking soda, and cinnamon.
- Add dry ingredients to wet ingredients.
- Stir in the yoghurt (or milk) until you get a smooth batter.
- Pour into the cake tin and bake for 40–45 mins, or until a skewer comes out clean.
To ice the cake
Cool completely before icing.
- Beat cream cheese and butter until smooth.
- Add icing sugar, vanilla and a squeeze of lemon juice. Beat again until fluffy.
- Use a knife to spread evenly on top of the cake.
Tip
Don't like icing? Simply dust with a mix of sugar and cinnamon.
