Mini pavlovas

Make your own mini pavlovas to round out your festive feast! Top with seasonal berries and fresh cream. This dessert is part of the Eat Well This Christmas for Less menu.

Ingredients

  • 4 Egg Whites
  • Pinch of Salt
  • 1cup Sugar
  • 1 1/2tsp Malt Vinegar
  • 1/2tsp Vanilla Essence
  • 500ml Pam's Cream
  • 2 Chocolate Flakes
  • 2 Punnets of Strawberries
  • 1 Punnet of Blueberries

  1. Preheat the oven to 150°C
  2. Lay a piece of non-stick baking paper on a baking tray. Trace 8-10 circles sized 6cm diameter onto the paper. Leave a space between each circle.
  3. Add the egg whites to a mixing bowl with a pinch of salt, beat with an electric beater until they form stiff peaks.
  4. Add the sugar to an oven proof tray and heat in the oven until just warm. Add the sugar to the egg whites and beat until glossy and stiff peaks have formed.
  5. Add the vanilla and malt vinegar to the mixing bowl, beat to combine.
  6. Pipe or spoon the pavlova mixture into the circles on the baking paper, dividing the mixture evenly.
  7. Place the baking tray in the oven and turn the oven temperature down to 120°C, bake the pavlovas for 1 ½ hours.
  8. Remove the tray from the oven and allow to completely cool before decorating with whipped cream, chocolate flake and fresh berries.
