
Raw broccoli salad

Load up on your greens with tasty broccoli salad. With sweet pops of cranberries and creamy dressing, this is a winning side dish for summer. This recipe is part of the Eat Well This Summer For Less menu.

Ingredients
2 Broccoli
1 Red Onion
1/3 cup Mayonnaise
1/3 Sour Cream
2 tbsp Honey Mustard Dressing
1 Lemon
Salt/Pepper
1/4 cup Dried Cranberries
1/4 cup Pumpkin Seeds
Method
Dice the broccoli florets and stalks in small pieces, add to a large bowl.
Finely dice the red onion and add to the bowl.
Add the mayonnaise, sour cream, honey mustard dressing and a squeeze of lemon juice to a small bowl. Mix well to combine, season with salt and pepper. Add to the broccoli and red onion. Toss well to combine, refrigerate until ready to serve.
Serve topped with dried cranberries and pumpkin seeds.
