Fast Microwave Baked Potato
For an after school snack, light lunch or served as a side with your main meal - baked potatoes are a winner when it comes to an easy, affordable and nutritious meal. Top with sour cream, cheese, butter or what ever you're craving!

- 1 large potato
- pinch of salt and pepper
- 3 teaspoons sour cream
- Finely sliced chives or spring onion
- Scrub potato to remove any dirt. Pierce potato skin with a fork about 4 times on all sides .
- Microwave the whole, unpeeled potato in the microwave until soft - about 3 to 4 minutes, then turn over and cook for another 3-4 mins. The potato should be cooked through and soft when poked.
- Split potato down the middle - be careful as it can be hot! Season with salt and pepper and mash up the inside a little with a fork. Add sour cream to the inside, top with chopped herbs.
To serve:
You can use any combination of your favourite fillings. For a simple filling, simple spread some butter and season with salt and pepper. Or you can choose something more filling, like bacon, grated cheese, chilli or baked beans.
Serve as a light snack or as a side with your main meal.
