Garlic butter chicken thighs

Roasted chicken thighs are already delicious — but with the addition of homemade garlic butter they simply can’t be beaten! Add this tasty number to your weeknight menu. This recipe is part of our chicken thigh recipe collection

  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper
  • 125g butter, room temperature
  • 5 tsp crushed garlic
  • 1 tsp fresh thyme leaves, chopped
  • 2 tsp fresh parsley leaves, chopped
  • Zest of 1 lemon

  1. Preheat the oven to 220° C.
  2. Combine butter, garlic, thyme, parsley and lemon zest in a bowl.
  3. Pat chicken thighs dry and season liberally with salt and pepper. Rub the chicken thighs with the garlic butter, including under the skin.
  4. Bake in the oven for 35 minutes, then serve with mashed potatoes.
  5. Any leftover garlic butter can be kept in the fridge until needed.

Tips

Want your thighs to be extra buttery? Melt down some of the garlic butter and toss the thighs with it right after they have cooked.  

Can you overcook chicken thighs in the oven?

While you can overcook chicken thighs, it is more difficult than overcooking chicken breasts and our best advice is to check your thighs when there is 10 minutes left if you feel like they may be overcooking. 

Do you cook the chicken thighs open or closed?

It doesn’t matter! Open them up or leave them rolled, either way, make sure to rub the garlic butter in all of the crevices to make sure you don’t get a section of thigh that has no seasoning.
