Hasselback Kūmara

Ingredients

  • 4 kūmara

  • 2 tablespoons olive oil

  • ¼ cup Greek yoghurt

  • Handful fresh coriander, finely chopped

  • Handful dill, finely chopped

  • 1 clove garlic, minced

Method

  1. Preheat oven to 200°C

  2. Thinly slice the kūmara leaving the bottoms intact. Place onto an oven tray and drizzle with olive oil

  3. Roast in the oven for 35-40 minutes or until golden and crisp

  4. In a small bowl combine the dressing ingredients and mix well

  5. Top kūmara with a small amount of sauce and sprinkle over extra coriander before serving
