Lolly Cake


  • Serves 12
  • Prep time: 15 minutes plus chilling | Cooking time: 4 hours chilling

A Kiwi classic treat that's super quick and easy to make with only a few ingredients - no baking needed. Great for celebrations and kids birthday parties!

Ingredients

  • 120g butter

  • 200g Pams sweetened condensed milk (about half a tin)

  • 190g Explorer lollies

  • 250g malt biscuits

  • 1 cup desiccated coconut

Method

  1. On a low heat, warm butter and condensed milk in a pot, stirring slowly until the butter is melted and combined together. Remove from the heat.

  2. Cut up the lollies into bite-sized chunks.

  3. Crush biscuits to crumbs in a food processor.

  4. Mix it all together until combined. Form into a log shape, using your hands to pack it tightly together.

  5. Roll the log in coconut then wrap in plastic food wrap. Chill in fridge for around 4 hours.

  6. Cut into slices once it's set.

Tips

You can also use marshmallows or Fruit Puffs instead of Explorers.

You can shape the mixture into bite-sized balls, then roll in coconut. Or press into a tray to make a lolly slice and sprinkle with coconut. Both forms will also need chilling.

How long does lolly cake last?

It will last about 1 week. Best to keep refrigerated. It can last about 3 months in the freezer, just be sure to thaw before eating.
