
New Potatoes with Butter and Mint

A simple side dish - the perfect accompaniment to BBQs or Christmas lunch!

Ingredients
1.5kg perlas potatoes
2 tbsp butter
10 fresh mint leaves
Method
Boil the potatoes in a saucepan of salted water until they are just cooked so the skins stay on the potatoes. Add approx 5 fresh mint leaves to the saucepan.
Drain the potatoes and place the butter in the saucepan, stir carefully to coat the potatoes.
Serve with a few fresh mint leaves as the garnish.
