New Potatoes with Butter and Mint
A simple side dish - the perfect accompaniment to BBQs or Christmas lunch!

- 1.5kg perlas potatoes
- 2 tbsp butter
- 10 fresh mint leaves
- Boil the potatoes in a saucepan of salted water until they are just cooked so the skins stay on the potatoes. Add approx 5 fresh mint leaves to the saucepan.
- Drain the potatoes and place the butter in the saucepan, stir carefully to coat the potatoes.
- Serve with a few fresh mint leaves as the garnish.
