One Pot Italian Bake
A yummy meal for the whole family, supplied by NZ Pork.
Ingredients
Method
- 200g small macaroni
- 30ml olive oil
- 1 tsp crushed garlic
- 200g onion, peeled and chopped
- 800g whole peeled tomatoes in juice, drained and chopped
- 400ml juice from drained tomatoes
- 2 tbsp tomato paste
- 300g red pepper, seeded and chopped
- 300g green pepper, seeded and chopped
- 600g lean ham, diced
- 2 tbsp black olives, stoned and halved
- Freshly ground black pepper
- 300g mozzarella cheese, thinly sliced
- Cook macaroni in boiling water for 10 minutes or until tender but still firm. Rinse and drain well.
- Heat olive oil and fry onion and garlic until onion is soft. Add tomatoes, juice, tomato paste, red and green pepper, ham, olives and black pepper and simmer for 5 minutes.
- Stir in cooked macaroni and pour into shallow baking dishes.
- Cover with the sliced cheese and bake in a preheated oven at 180°C for 20 minutes or until cheese melts.
- Serve immediately.
