
One Pot Italian Bake

Ingredients
200g small macaroni
30ml olive oil
1 tsp crushed garlic
200g onion, peeled and chopped
800g whole peeled tomatoes in juice, drained and chopped
400ml juice from drained tomatoes
2 tbsp tomato paste
300g red pepper, seeded and chopped
300g green pepper, seeded and chopped
600g lean ham, diced
2 tbsp black olives, stoned and halved
Freshly ground black pepper
300g mozzarella cheese, thinly sliced
Method
Cook macaroni in boiling water for 10 minutes or until tender but still firm. Rinse and drain well.
Heat olive oil and fry onion and garlic until onion is soft. Add tomatoes, juice, tomato paste, red and green pepper, ham, olives and black pepper and simmer for 5 minutes.
Stir in cooked macaroni and pour into shallow baking dishes.
Cover with the sliced cheese and bake in a preheated oven at 180°C for 20 minutes or until cheese melts.
Serve immediately.
