Rice Crispy Eggs
These tasty Easter treats are super simple to make, and only need three ingredients for the base mixture - plus whatever toppings you want.

- 3 Tbsp Butter
- 3 Cups Rice Crispy cereal
- 3 Cups Marshmallows
Optional:
- Hollow chocolate eggs
- Mini chocolate chips
- sprinkles
- food colouring
- Melt the butter in a pot on a low heat. Add 3 cups of marshmallows - add cocoa powder if you want - and stir until they are completely melted, then take the pan off the heat.
- If adding food colouring, add it now and mix well.
- Add rice crispy cereal and mix until it is completely covered with the marshmallow mixture. Allow the mixture to cool slightly so you can handle it.
- If adding extra treats (chocolate chips, sweets, sprinkles), do this now and mix well.
- Take small handfuls of the mixture and use your hands to mould into egg shapes. You can also shape the mixture using hollow Easter eggs, chocolate moulds or cupcake tins if you prefer.
- Chill in the fridge for at least 30 minutes until the shapes have firmed up.
Tips
When shaping the mixture, press together firmly with your hands so there's no holes. This way they won't break apart as easily.
If you're a chocolate lover, you can use chocolate rice crispies, or simply add a tablespoon of cocoa powder at step one.
Store in the fridge.
