
Simple Tomato Relish

During and especially towards the end of summer, tomatoes can be cheap and plentiful! If you want to give summer tomatoes a new life throughout the year, homemade tomato relish is an easy way to use up an abundance of tomatoes.
Ingredients
1.5 kg ripe tomatoes, chopped
2 medium onions, finely chopped
1 cup brown sugar
1 cup malt vinegar (or apple cider vinegar)
1 tsp salt
1 tsp mustard powder
1 tsp curry powder
½ tsp ground black pepper
½ tsp paprika
1 Tbsp cornflour (mixed with 2 Tbsp cold water)
Method
Place chopped tomatoes and onions in a large pot on medium heat.
Add sugar, vinegar, salt, mustard powder, curry powder, pepper, and paprika. Stir until the sugar dissolves, then bring to a gentle boil.
Lower heat and simmer uncovered for about 1 hour, stirring occasionally, until the mixture thickens.
Mix the cornflour with cold water and stir into the relish. Simmer for another 5 minutes.
Pour into sterilised glass jars while hot and seal immediately.
Tips
If stored correctly - sealed into clean glass jars, and stored in a cool, dark place, your homemade relish should last up to 12 months.
Once the jars are open, store in the fridge for up to 4-6 weeks.
How to sterilise jars
Wash your jars well with hot soapy water, rinse well. Then place the jars and lids in a large pot with water, bring to the boil and simmer for 10 minutes. Remove carefully and let drip dry. Make sure they're completely dry before adding your relish.
What can I use relish for?
Relish is a versatile condiment that can be used to add flavour to sandwiches and burgers, as a side for meat, salads or eggs. Relish is also a great addition to a cheese board, or simply eaten with cheese and crackers.
