Easy Chicken Drumstick Hot Pot
We’ve made this slow cooker chicken hot pot recipe as easy as possible, with loads of flavour and the most tender chicken! The soup add lots of flavour to the veggies and chicken. You can add any vegetables you like to this dish too.

- 8 chicken drumsticks
- 2 carrots, chopped
- 2 kumara, chopped
- 1 mushroom
- 1 can Creamy Chicken Soup
- 1 packet Chicken Noodle Soup Mix
Ingredients for side dishes
- 4 potatoes
- 1 broccoli
- Place the ingredients in a slow cooker and cook for 5-6 hours on low, until the meat is easily coming away from the bone.
- If there is quite a bit of liquid, thicken with 2 Tbsp flour mixed with a small amount of water and stir through, cook on high for 10-15 mins to thicken up. Add more flour/water mix if needed.
- Season and serve with mashed potatoes and steamed broccoli.
Tips and FAQs
- Want to make this recipe even easier? Throw the potatoes in the slow cooker with the chicken and steam the broccoli in the microwave!
- To save time in the morning - you can throw all the ingredients into a large snaplock bag and store overnight in the fridge.
Can you overcook chicken in a slow cooker?
Yes, it is possible! If the meat is cooked too long it could end up dry and not juicy and tender. Be sure to check on your chicken during cooking to make sure it isn’t drying out.
