  1.  Place ingredients (except the potatoes) in a slow cooker, stir until liquid is combined and cook on low for 3-4 hours..
  2. If there is quite a bit of liquid, thicken with 2 Tbsp flour mixed with a small amount of water and stir through, cook on high for 10-15 mins to thicken up. Add more flour/water mix if needed.
  3. Peel and chop the potatoes into equal pieces. Boil in salted water for about 15-20 minutes until soft. Drain water out in a colander, then add back to the pot or bowl. Season with salt and pepper, add a tablespoon of butter and a splash of milk if desired, then mash thoroughly.
  4. Serve the sausages on a bed of mashed potatoes.

Tips:

For moist, caramelised sausage, slice before cooking into coin shaped pieces.

FAQs:

What makes Italian sausage different?

Any kind of pork sausage will work in this recipe, but Italian sausages often have fennel and Italian seasoning blends in them.

Why is Italian sausage more pink?

Sometimes this depends on the seasoning added to the sausage, most often cayenne pepper, paprika, and other red seasonings will make the sausage appear more pink before it’s cooked.
