Easy slow cooker meatballs

Meatballs can be time-consuming to prepare, especially after a busy day at work. Make your weeknights easier by preparing this slow cooker meatball recipe over the weekend and freezing it until you’re ready for your crockpot to work its magic.

Ingredients

Method

  • 400g beef mince
  • 1 onion, diced finely
  • 1 Onion Soup Mix
  • ½ Tbsp soy sauce
  • ½ Tbsp Worcestershire sauce
  • ½ Tbsp tomato sauce
  • ½ Tbsp sweet chilli sauce
  • 1 tsp mixed herbs
  • 1 egg
  • 2 Tbsp flour
  • 1 Tin tomatoes
  • 1 Tin pasta sauce

 

Side Ingredients

  • 400g spaghetti
  • 2 carrots
  • 2 zucchini

  1. In a large mixing bowl, add the mince, onion, onion soup mix, soy sauce, Worcestershire sauce, tomato sauce, sweet chilli sauce, mixed herbs, egg and flour. Mix thoroughly until combined – add extra flour if the mixture is too sticky.
  2. Roll into 8 large meatballs.
  3. Mix the pasta sauce and tinned tomatoes together, then place the meatballs evenly spaces into your slow booker with the tomato sauce mix.
  4. Cook on low for 4-5 hours (until meatballs are fully cooked).
  5. Slice the zucchini and carrots and lightly grill or fry.

To serve place the meatballs on a bed of pasta, with a side zucchini and carrots.

Tips:

  • If the sauce has thickened too much, add a small amount of water and stir.

     
  • Swap out the zucchini and carrots for seasonal vegetables to make this meal a staple any time of the year.

Why do my meatballs fall apart in the slow cooker.

A way to stop your meatballs from falling apart in the slow cooker is to brown the meatballs before putting them in the slow cooker. 

Should you roll meatballs in flour?

There is no need to roll your meatballs in flour after combining. However, if you feel they are extra sticky, it wouldn’t hurt to roll them in a little bit of extra flour.
