View the method
  1. First separate the leaves and stems.
  2. Chop the stems into 2 inch pieces and the leaves into bite sized chunks.
  3. Roughly chop 5 cloves of garlic together with 1-2 red chilis.
  4. In a small bowl combine oyster sauce (1.5 Tbsp), with soy sauce (0.5 Tbsp), sugar (0.5 tsp) and water (1 Tbsp).
  5. Fry the garlic and chilli in a wok or fry pan, with 1 Tbsp of oil on medium high heat for one minute until softened. Add the gai lan stems and cook for 45 seconds, then turn the heat up to high. Add the chopped leaves and oyster sauce mix and cook for a further 45 seconds.
  6. Remove from the heat and serve immediately.

This dish is particularly good served with jasmine rice.
