Vege and bean burgers
Butter beans make the base of these vegetarian burger patties, while grated carrot, courgette and garlic help to add lots of flavour and moisture. You can also try using black beans if you prefer. See more burger ideas in our burger recipe collection.

- 1 can butter beans, drained and rinsed
- 2 carrots, grated
- 2 courgettes, grated
- 1 clove garlic, crushed
- 2 eggs
- 1/2 cup dry breadcrumbs
- 1 tbsp oil
- 4 wholemeal burger buns
- 4 tbsp tomato sauce
- 1 lettuce
- 2 tomatoes, sliced
- Mash beans.
- Mix mashed beans with grated carrots, courgette, garlic, eggs and breadcrumbs.
- Heat oil over medium heat in large frying pan.
- Spoon mixture into frying pan a few at a time.
- Cook on both sides until golden brown and cooked through.
- Serve in burger buns with tomato sauce, lettuce and tomato.
