Nothing clever going on here. Just time, used properly. These days, everyone’s trying to speed things up. Wildcraft went the other way. Made using our traditional BIGA technique, each loaf includes a 24 hour slow fermented dough that helps build deeper, more complex flavour and a deliciously soft texture. Funny what happens when you don’t rush things. Enjoy it fresh, or give it a quick toast after a few days.
