Stuffed chicken breast wrapped in bacon

- 4 boneless skinless chicken breasts
- 60g cream cheese
- ¼ cup shredded tasty cheese
- ¼ cup shredded mozzarella
- ½ tsp garlic powder
- ½ tsp onion powder
- 8 rashers streaky bacon
- 4-8 toothpicks
- Preheat the oven to 180° C.
- In a bowl, combine cream cheese, tasty cheese, mozzarella, garlic powder, and onion powder.
- Using a paring knife, cut a deep slit along the length of each chicken breast. Press ¼ of the cheese mixture into the slit on each breast.
- Wrap each breast with 1-2 rashers of bacon, depending on the size of the breast. It should cover the opening to secure the cheese inside. Use 1-2 toothpicks to hold the bacon in place.
- Arrange breasts on a rimmed baking sheet lined with foil, ensuring they have space around them. Bake for 20 minutes, then turn the oven to grill for 5 more minutes to help the bacon go crisp.
- Remove the toothpicks and serve.

To keep your chicken from drying out you can brine your chicken in a mixture of water and a few tablespoons of salt for about 20 to 30 minutes. This will not only boost the natural flavour and moisture of the chicken breasts but will leave you with a super tender piece of meat.
