How to reheat cooked beef

Low and slow is the best way to reheat cooked beef. The focus should be on reheating to achieve an internal temperature of 74℃ and not recooking as this will ruin the meat making it dry and tasteless. The most effective methods of reheating beef are in a microwave, on the hob and in the oven.

Three ways to reheat cooked beef

Remove beef from the fridge and leave at room temperature for 30 minutes to ensure even cooking.

Sprinkle beef with a little water or beef broth or cover with gravy. Wrap beef tightly in foil. Preheat the oven to 160℃ and reheat for 20-30 minutes. Check the internal temperature is 74℃ before serving. 

Consistent reheating, suitable for a large volume of sliced meat. Difficult to overcook.

Time-consuming

Reheat cooked beef on the hob

 Heat a little oil,  water, gravy or sauce in a sauteing pan before adding the beef. Cover tightly and cook at a medium-low temperature for 10-15 minutes, stirring regularly until it reaches an internal temperature of 74℃.

Precise temperature control, little risk of overheating. Ideal for diced and ground beef.

Needs to be monitored closely.

Reheat cooked beef in the microwave

Place beef in a microwavable dish, add moisture with a little beef stock, gravy or a sauce. Cover then using the reheating setting follow the manufacturer's instructions for reheating meat. Remove once the internal temperature has reached 74℃.

Fastest reheating method. 

May result in uneven heating, and can dry beef out. Not recommended for large roasts or joints.

Reheating cooked beef from frozen 

For best results, defrost frozen beef in the fridge or microwave before reheating. Cooked beef can be reheated directly from frozen in a sauce or gravy. This will extend the reheating times above by approximately 50%.
