Frozen vs Fresh Pork | Pork Shopping Guide
Is fresh pork better than frozen?

The differences between frozen pork and fresh pork
There are minimal differences between fresh and frozen pork. Fresh pork may be slightly tastier with a more consistent texture but frozen pork can’t be beaten for convenience.
Freezing methods
When pork is frozen rapidly, its temperature is reduced to below -18℃ and this can extend its freezer shelf life from 3-6 months, depending on the cut. In comparison, fresh pork typically has a shelf life of just 2 days in the refrigerator.
When pork has been commercially quick-frozen, then defrosted in a refrigerator at home, all the freshness and nutrients are retained and firmly locked in for your enjoyment. Unless you have a quick freezing button, ice crystals could form when freezing pork at home, causing excess moisture to leach out during thawing, resulting in dry meat.
Storage life
When wrapped in air-tight packaging, freezing extends the storage life of pork from 3-6 months without significantly affecting taste and quality. Refrigerated fresh pork has a much shorter shelf life of 2 days and must be consumed within the use-by-date.
Affordability
Frozen pork tends to be cheaper than fresh pork because it’s less likely to expire on the supermarket shelf. Supermarkets often purchase excess frozen pork in bulk at a discounted price and run meat specials. You should also watch out for price reductions and special offers in the chiller section. This is the perfect time to stock up your freezer.
Convenience
Fresh pork is ready to cook without the need for planning ahead and thawing. However, frozen pork provides greater flexibility in meal planning as it can be stored for longer and means fewer trips to the supermarket.
Taste and texture
Fresh pork may have a slight edge in texture and flavour, however properly thawed and cooked frozen pork can closely mimic the quality of fresh pork. Improper home freezing and thawing can cause excessive moisture loss and a rubbery texture on cooking. Fresh and frozen pork will benefit from generous seasoning and appropriate cooking techniques to enhance the finished dish.
Nutrition
There are minimal nutritional differences between fresh and frozen pork. Freezing can slightly affect the texture and moisture content, but the nutritional profile remains mostly intact.
