How to safely reheat cooked pork

Pork can dry out during reheating and moisture can be added to prevent this with a sauce, gravy or a little stock. Pork should be reheated thoroughly until the centre reaches a core temperature of 74℃ when bacteria is destroyed. The most effective methods for reheating pork are in a conventional oven, a microwave, on the hob or in the air fryer.

Preheat the oven to 170℃, place pork in a shallow dish, add several Tablespoons of water or stock and cover to retain moisture. Heat for 20 mins, check internal temp is 74℃ 

The oven is the best option for even reheating of larger pieces or a joint. Retains moisture well.

Longer cooking method.

Doesn’t crisp fat but can be browned under the grill.
Reheat cooked pork on the hob

Place pork in a pan with several teaspoons of stock or water. Heat on medium for 5-10 minutes until piping hot and internal temp is 74℃.

Best reheating option for pork pieces. Stock can be replaced with soup, sauce or gravy. Quick heating, precise temperature control

Limited capacity. May dry out although this can be avoided with the addition of sauce.

Reheat cooked pork in the microwave

Place pork in a microwave safe dish, add 3  teaspoons of stock and a drizzle of olive oil and cover. Heat on high for 2-5 minutes, stir at one-minute intervals until internal temp reaches 74℃

A microwave is the fastest, most convenient reheating method for pork. Not recommended for whole joints and large pieces.

Uneven heating, high risk of drying out or over cooking. Needs constant monitoring.
