Like all meats, sausages are perishable so it’s important to store them safely in the fridge. This makes them safe to eat, and stay fresh and tasty for longer.
Raw and cooked sausages can be frozen for up to 2 months. Freeze cooked sausages immediately after cooking and cooling or refrigerate and freeze within 24 hours.
The safest, easiest way to defrost sausages is in the refrigerator, whilst the quickest method is in a microwave. Ensure the sausage's temperature does not rise above 5℃, to reduce the risk of food poisoning.
When cooking frozen raw sausages ensure the meat is cooked all the way through to eliminate harmful bacteria. Frozen precooked sausages just need to be reheated to a safe temperature before eating.
Always reheat sausages thoroughly until piping hot, when the centre of the meat reaches a core temperature of 71℃ and bacteria is destroyed.
